Top 12 Recipes of 2012



I cannot believe that 2012 is almost over.  2012 was my first full year blogging and I have had a great time.  I want to thank you all for reading and following along with What's Cooking, Love?  I can't wait to see what is in store for 2013 in my life and on this blog.  I have been busy over the holiday making some fun recipes to start out 2013!

Since it is the end of 2012, I thought I would my top 12 recipes of 2012.  I hope that you enjoy!

Nutella Dip



I hope that everyone had a great holiday.  We had a great Christmas and Aaron loved opening all of his presents.  This weekend we have a few family holiday parties to go to.  This time of year, although its really busy, is always my favorite.  I really like all the parties and love seeing family.  

I always look forward to New Year's Eve as well.  Brian and I usually go out to dinner and we usually hang out with our friends from college.  Since New Year's Eve was on a Sunday last year, we were able to travel to our friends.  Unfortunately, this year everyone has to work on Monday, so we will be staying home with Aaron, since we don't have a babysitter.  We are going to planning a fun night at home.  



The one thing I love about all the parties is the food and especially all of the appetizers.  This Nutella Dip would be great to make for a party or for when you are just relaxing at home.  I love the chocolate and hazelnut flavor the Nutella brings to the dip.  I even added some chopped Ferrero Rocher candies to the dip, which is optional.  This dip is great with fruit, like strawberries, and is also great with graham crackers or animal crackers. I plan on making some of this wonderful dip for our New Year's Eve celebration. 



Nutella Dip

1 package (8 ounces) cream cheese, softened
1/4 cup Nutella
1/4 cup powdered sugar
1 container (8 ounces) of Cool Whip
4 Ferrero Rocher chocolates, chopped (optional)

1.  Mix the cream cheese and Nutella together.  Then gradually stir in the Cool Whip, powdered sugar, and 3 Ferrero Rocher chocolates (optional), until combined.

2.  Optionally add the additional Ferrero Rocher on the top.  Chill before serving.  Serve with graham crackers, animal crackers, strawberries, or other fruit.

Easy Snickerdoodles



Today I am posting with a heavy heart in remembrance of those killed and affected by the shootings last Friday at Sandy Hook Elementary School in Newtown, Connecticut.  I cannot believe that it has only been one week since the shootings happened.  I followed along with the events of last Friday and was so heartbroken.  The tragedy made me really realize that you need to live every moment as it is your last and treasure the moments that you do have with your loved ones.  

  The tragedy in Connecticut really affected me and I can't imagine what those families are going through.   I know last weekend I hugged my son a little harder and remembered to appreciate all the little moments.  I think its important to step back and spend as much time with your loved ones as possible, especially your children.  I think a great way to do this is by baking with your children and by making crafts with them.  

When I am baking, I like to bring my son's highchair in the kitchen and let him watch.  I explain the steps to him like he is my audience on a television cooking show. When my son gets older I plan on having him help out in the kitchen.  Baking or a cooking is a great way to get kids involved in an everyday activity. I think this is especially true during the holidays.

According to their website, Newtown Youth and Family Services, Inc. is a “licensed, non-profit, mental health clinic and youth services bureau dedicated to helping children and families achieve their highest potential. NYFS provides programs, services, activities, counseling, support groups and education throughout the Greater Newtown area.” All donations made to them are going to go back to those affected by the school shooting. 

This cookie recipe came from my mom.  Around Christmas time I used to always love to help her bake cookies.   I want to pass that tradition on to my children.  My mom and I love easy recipes that allow you to spend less time in the kitchen and more time with the ones you love.  These easy snickerdoodles are a great treat and are a great project for your kids to help you with.  Also, you can use different colored sugar, like using red and green for Christmas snickerdoodles.  I hope that you make these delicious cookies with your kids and make sure to have fun! 



Easy Snickerdoodles

1 roll (16.5 ounces) refrigerated sugar cookie dough
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup flour

1.  Preheat the oven to 350 degrees. 

2.  In a small bowl combine the cinnamon and sugar and set aside.

3.  In a large bowl break up the refrigerated sugar cookie dough and stir in the flour until well mixed.  Reshape the dough into a log and cut the cookie dough into 1/4-inch slices.  Shape each slice into a ball and roll in the cinnamon and sugar mixture until it is covered.  Place the balls on an ungreased cookie sheet, 2 inches apart.  

4.  Bake for 10-14 minutes or until golden brown.

Santa Hat Fudge



I took a "moment of silence" away from my blog over the weekend in order to pay my respects to the victims and families affected by the tragedy in Newtown, Connecticut and also due to a family emergency.   The tragedy in Connecticut really affected me and I can't imagine what those families are going through.   I know that this weekend I hugged my son a little harder and remembered to appreciate the little moments.

While these shootings have really affected me, it really hit home for me this weekend on how it is important to spend as much time with your family as you can.  This weekend my father had a stroke.  My dad has lost all movement in his left arm and leg.  At least he still has his speech and is in stable condition. Even though it will take a lot of time and a lot of rehabilitation, my dad should hopefully be okay.  While I know this is not the same as what happened at Sandy Hook, I am talking about them together because they are both events that affected me this past weekend and helped me to realize just how important family is.  


I think that this fudge is a great idea for a fun treat to make as a family.  It is a fun Christmas treat and your children can help you decorate the fudge to look like Santa Hats.  Plus, the fudge is candy cane flavored and is delicious.  I hope that you make this fun treat with your family to enjoy this Christmas!


Santa Hat Fudge (Candy Cane Flavored)

1 1/2 cups sugar
3/4 cup heavy cream
3/4 cup butter
2 cups white chocolate chips 
1 jar (7 ounces) Marshmallow creme
1 package (3.4 ounces) Candy Cane instant pudding, dry
1/2 cup crushed candy cane
30 drops red food coloring

Decorations
1/4 cup white chocolate chips, melted
White Chocolate Chips
Mini Marshmallows

1.  In a large saucepan, melt the butter, sugar, and heavy cream together. Cook over medium-high heat until mixture starts boiling. Boil for 5 minutes, stirring constantly. Then remove from heat.
2.   Quickly whisk in the white chocolate chips, Candy Cane pudding mix and marshmallow creme. Whisk until fully blended (one to two minutes). Stir in the red food coloring to make the fudge more of a red color.  Pour into a 13x9 inch baking dish lined with parchment paper. Refrigerate for at least 4 hours or overnight.
3.   Remove from the pan and cut into triangles.  To decorate use the melted white chocolate as glue.  Dipping the bottom of a mini marshmallow in the white chocolate, glue to the top of the triangle.  On the bottom glue the white chocolate chips to create a Santa Hat.
