Chicken Parmesan Burgers


I really like Chicken Parmesan and I like to find all different types of ways to make it.  I have made Baked Chicken Parmesan and Chicken Parmesan Quesadillas.  For summer I thought it would be a great idea to make a Chicken Parmesan Burger.  We made these on toasted ciabatta bread, but any type of bread or roll can be used.  

These burgers tasted very good, they tasted like chicken parmesan, but in a form that is perfect for summer picnics and parties.  This would be great to serve at any summer party, including a 4th of July party.  I hope that you really enjoy these burgers. I can't wait to make them again!



Chicken Parmesan Burgers

1 pound ground chicken
1/3 cup marinara sauce
1/2 tablespoon garlic powder
1/4 teaspoon parsley
1/2 cup bread crumbs
1/8 cup parmesan cheese
1/4 cup mozzarella cheese
Ciabatta bread or rolls

1.  Mix the chicken, seasonings, bread crumbs, and cheeses together in a large bowl, until they are combined.  Form 4 equal patties.  

2.  Grill the burgers for about 5 minutes on each side or until chicken has an internal temperature of 160 degrees.
3.  Meanwhile, sprinkle olive oil on each side of the ciabatta bread and toast on the grill for 2-3 minutes.

4.  Once the burgers are done top with more mozzarella cheese and marinara sauce.

Red, White, and Blue Soda



I love the 4th of July, its a great holiday to spend time with family and friends.  I also love watching fireworks.  My husband's birthday is on July 5, so we get to have celebrations two days in a row.  When I think of the 4th of July, I think of sitting outside with good food and good drinks.  

This is a great way to jazz up a regular soda and make it more festive for the holiday.  This is fun for kids and great for any 4th of July party.  Also, its so easy and the only time needed is to make the ice cubes.  First start with Sierra Mist, Sprite, 7UP, or Ginger ale.  Then add Gatorade or Koolaid flavored blue and red ice cubes to the soda.  The flavors of the ice cubes add great flavor to the soda when they start to melt. This is a great way to jazz up any soda for the holiday.



Red, White, and Blue Soda

1 can of soda, use either Sierra Mist, Sprite, Ginger ale, or 7UP
2 ice cubes of Fruit Punch Gatorade (can also use Kool Aid or any other red drink)
2 ice cubes of Glazier Freeze Gatorade (can also use Kool Aid or any other blue drink)

1.  Pour the can of soda into a glass and add the blue and red ice cubes.  Drink and enjoy!

I hope that everyone had a great Father's Day! We had a great weekend. Aaron's first birthday party was busy and a lot of work, but we had so much fun. He loved the cake and ate a good bit of it!! This weekend we are heading to the Outer Banks for a week.  We have never been to the Outer Banks before, so we're excited about it!  The 8 hour drive should be interesting with Aaron and our dog, Homer.

Patriotic Mini Parfaits



Today is my son's first birthday!! We had his party over the weekend and we all had a great time.  Here are some pictures from the photo shoot cake smash we did last week. I can't wait to get the rest of the pictures.



These mini parfaits are a great and easy dessert for the 4th of July.  They are made using pound cake, strawberries, blueberries, white chocolate chips, and whipped cream.  They were so delicious! This is a great treat for summer and a,festive treat for a 4th of July picnic or celebration.  I hope that you enjoy these, I can't wait to make them again!

Patriotic Mini Parfaits
(Makes 4 mini parfaits)

4 mini parfait glasses
6 strawberries, quartered and mashed
1 teaspoon sugar
1 cup blueberries, lightly mashed
4 slices of pound cake, cubed
4 tablespoons white chocolate chips
Whipped cream (Cool whip or Reddi Whip for top)

1.  Place half of a slice of cubed pound cake into the bottom of the 4 parfait glasses. 

2.  Cut the strawberries into quarters and mash with a fork.  Then mix the mashed strawberries with the sugar.  Spoon a little bit of the strawberry mixture over the pound cake. 

3.  Place some of the blueberries on top of the strawberry mixture.  

4.  Put 1/2 tablespoon of white chocolate chips on top of the blueberry layer.

5.  Add  a layer of whipped cream on top of the white chocolate chips.  

6.  Repeat each layer and then top with a blueberry.

Chicken Crescent Bundles



Happy Father's Day!! Today is also my 6th Anniversary.  I hope everyone had a great weekend. Ours was busy, yesterday was Aaron's 1st birthday party.  I'm sorry I didn't post anything for a couple of days, but I was busy preparing for the party.  

I posted this recipe a couple of weeks ago when I swapped blogs with Lena from  Mom2Memphisand Ruby.  You should check out Lena's blog, she has some great tutorials on there! I thought I would re-post the recipe here in case you did not get a chance to see it.  


This recipe is really easy, anyone can make it.  Having a kid makes cooking dinners even more difficult. I love having easy, tasty recipes for weeknights, so that I can spend more time with my son.

These bundles are made using refrigerated crescent dough.  They tasted really good and were easy to make.  These are perfect for a busy night when you need to get something on the table. This is a great go to meal.  We definitely plan on making this again.

Chicken Crescent Bundles
(Recipe adapted from Best of the Pillsbury Bake-Off Cookbook)

1 package (3 ounces) cream cheese, softened
1 tablespoon butter, softened
2 cups precooked chicken, cubed
1 tablespoon chives
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons soy milk (can substitute regular milk)
1 can (8 ounces) refrigerated crescent dinner rolls
1 tablespoon butter, melted
3/4 cup seasoned bread crumbs

1.  Preheat the oven to 350 degrees.

2.  In a medium bowl, beat the cream cheese and 1 tablespoon softened butter until smooth.  Stir in the chicken, chives, salt, pepper, garlic powder, and soy milk.

3.  Separate the dough into 4 rectangles.  Firmly press perforations to seal.  Spoon 1/2 cup chicken mixture onto the center of each rectangle.  Pull the 4 corners of the dough to the center of the chicken mixture and twist firmly.  Pinch the edges to seal.  Place on an ungreased cookie sheet.

4.  Brush the tops of the bundles with 1 tablespoon melted butter.  Sprinkle with the bread crumbs.

5.  Bake for 25 to 30 minutes or until golden brown.

Mini Reese's Chocolate Cake Donuts with Peanut Butter Ganache


Usually I do not win anything, so I was surprised a couple of weeks ago when Ashton from Something Swanky emailed me to tell me that I won one of her giveaways.  The prize was a mini donut pan.  My husband and I both love donuts, so I was so excited when I received the donut pan in the mail.  The pan makes 12 mini donuts. I decided that I needed to make donuts right away.

Of course I had to combine my two favorite ingredients, chocolate and peanut butter to make these delicious mini donuts.  You can double the recipe to make regular size donuts and cook them for a little longer.  These donuts were so delicious, they tasted just like chocolate cake and were like individual sized cake bites.  The peanut butter ganache on top was so yummy. I'm drooling just thinking about these, I better go make some more!



Mini Reese's Chocolate Cake Donuts with Peanut Butter Ganache


Mini Reese's Chocolate Cake Donuts


1/2 box chocolate cake mix (about 1 1/2 cups of mix)
1 egg
1/4 cup vegetable oil
1/2 cup water
1 package of regular size Reese's (contains 2 Reese's cups), chopped

1.  Preheat the oven to 325 degrees.

2.  Mix all of the ingredients together except for the Reese's.  Then gently stir the Reese's into the cake batter.

3.  Grease the mini donut pan.  Then put the batter into a ziploc bag and cut a hole at the tip. (I find this is the easiest way to do it, but you can also spoon it in).   Squeeze the batter into the donut pan, filling each mold 2/3 of the way.

4.  Bake the donuts for 8-10 minutes or until an inserted toothpick comes out clean.  Cool the donuts before removing from the pan.

Peanut Butter Ganache


1/3 cup heavy whipping cream
1/3 cup peanut butter chips
1/2 teaspoon vanilla

1.  Place the peanut butter chips into a medium sized bowl.  In a small saucepan, pour the cream in and bring it to a boil. As soon as the cream boils up to the top of the pan, quickly remove it from the heat and pour it over the peanut butter chips.  Let it stand for a minute or two then whisk until smooth.  Stir in the vanilla until well blended.  Place a piece of plastic wrap over the bowl and cool at room temperature.

2.  Once the donuts are cool, either dip the top of the donut into the ganache or spoon the ganache over the donut.

Smokehouse Chicken


This chicken was so good!!! It is a great dinner for Father's Day.  My husband and I both though this chicken was fantastic.  The chicken was topped with bacon, mushrooms, barbecue sauce, and cheddar cheese.  My husband doesn't like mushrooms, so we didn't put mushrooms on his piece of chicken.  This chicken is nice, because you can customize what you want on your piece of chicken.  

This is a great meal for summer and is a great hearty meal that would be great to serve for your father or husband for Father's day.  I loved all the flavors on and the chicken and we will definitely be making this again! I hope you try it!


Smokehouse Chicken
(Recipe adapted from Plain Chicken)

6 chicken breasts
1 bottle garlic and herb marinade
6 slices bacon, cooked
1 can sliced mushrooms
1 cup shredded cheddar cheese
6 tablespoons of barbecue sauce

1.  Marinate the chicken in the garlic and herb marinade for at least 30 minutes.

2.  Grill the chicken for 15 minutes or until done.  

3.  Preheat the broiler on your oven.  Place the cooked chicken on a baking sheet.  Spread 1 tablespoon of barbecue sauce on each piece of chicken.  Top with the one slice of bacon, mushrooms, and shredded cheese.  Broil until the cheese is melted.

Layered Strawberry Mango Smoothies

It's time for the Crazy Cooking Challenge again.  This month the challenge was to make a fruit smoothie or drink.  My husband and I love smoothies, we make them almost every night.  The thing I love the most about smoothies is that they are so easy to make and create your own variations.  Smoothies are a great way to play with different ingredients and fruits.  

When I saw these Layered Smoothies on Pinterest, I knew I had to try making them.  They are from the blog Sandra's Recipes - Alaska.  This is a great blog and she has a lot of yummy smoothie ideas.  Of course, since this is a smoothie, I played with the ingredients.  This was a delicious and refreshing treat.  I ended up mixing the strawberry banana and mango orange layers together to drink the smoothie and they tasted very good together.  My husband and I will add this to the list of smoothies we make and will definitely be making this tasty treat again!

Layered Strawberry Mango Smoothie
(Recipe adapted from Sandra's Recipes - Alaska)
Makes 2 smoothies

Mango Orange Layer:

1 cup frozen mango pieces
1 and 1/2 cup orange juice
1 teaspoon lime juice concentrate
1 tablespoon honey

Strawberry Banana Layer:

7 Frozen Whole Strawberries
1 banana, chopped
3/4 cup strawberry cranberry juice
1 teaspoon lime juice concentrate
3 ice cubes

1.  In a blender, blend the mango orange layer until smooth and divide between two 8 ounce glasses and set aside.

2.  Rinse the blender, then blend the strawberry banana layer until smooth.  Gently pour this layer on top of the mango orange layer, while trying to maintain a separation of the layers.
