March 2 is Dr. Seuss' birthday.  I loved Dr. Seuss' books when I was younger and I hope to pass the love of them to my son.  I like the idea of making food that goes with a book to get kids more involved in reading.  This recipe collection shows some great snacks and meals that can be made to go with Dr. Seuss books.

Peanut Butter and Bacon Dog Treats


Today is my dog Homer's 2nd birthday, so I decided to make him dog treats for his birthday.  I've never made dog treats before, but I thought it would be a nice present for him.  This recipe was so easy.  It only called for three ingredients, but I decided to add bacon since Homer loves bacon flavored treats.  

Homer loved the treats.  We were watching TV and we all of a sudden heard something fall on the floor in the kitchen.  Homer had knocked down one of the treats from the counter.  This wasn't an easy feat for him either, as they were decently far back on the counter.  The fact that he did this shows that he must have really wanted a treat.  

This is a great and easy treat to make for your dog.  It makes a good bit of treats too, so they last awhile.  I hope your dogs enjoy them, I know mine did.



Easy Peanut Butter and Bacon Dog Treats
(Recipe adapted from Doggy Dessert Chef)

2 cups whole wheat flour
1 cup soy milk (can substitute regular milk)
1 cup peanut butter
1/4 cup bacon bits

1.  Preheat the oven to 350 degrees.

2.  Combine all ingredients in large bowl until mixed.  Knead the dough into a ball and then roll onto a floured surface until it is 1/4 inch thick.  Slice into squares.  Put the treats on a cookie sheet.  

3.  Bake the treats for 15-20 minutes or until slightly browned.  Cool before serving and refrigerate.

Scrambled Green Eggs and Ham


Dr. Seuss' birthday is coming up on Friday March 2.  My mom has the same birthday as Dr. Seuss, which I think is great because she is a kindergarten teacher.  I loved reading Dr. Seuss books as a kid, they were the  one of the starts of my love of reading.  I want to continue that tradition with my son Aaron and we have already read him a few Dr. Seuss books.   

When I was a kid, Green Eggs and Ham was one of my favorite Dr. Seuss books.  I like the idea of making food that goes with a story that you've just read.  I think it allows kids to interact more with the book and learn more from it.  I would like to do that with my son when he is older.  In honor of Dr. Seuss' birthday, I made my version of green eggs and ham.  Since I only like scrambled eggs, I scrambled the eggs with diced ham and added green food coloring.  This is a great way to get children involved in reading. 

Scrambled Green Eggs and Ham

6 large eggs
1/8 cup soy milk (can substitute regular milk)
1/4 cup diced ham
3 drops green food coloring
1 tablespoon butter

1.    Whisk the eggs in a bowl and add the soy milk, diced ham, and green food coloring. Continue whisking until all mixed. Heat a skillet over medium heat and melt the butter.  Pour the eggs into the skillet and scramble them while they cook.  Cook until they begin to brown.

Salsa Guacamole

I'm not the biggest fan of plain guacamole, but I had salsa guacamole at a party and I had to have it again.  This might not be the best looking dip, but it tastes great.  The salsa mixed with the guacamole gives more flavor to the guacamole. This dip is perfect for a party and is really easy to make.

Salsa Guacamole
(Recipe adapted from Taste of Home)

6 small ripe avocados, halved and pitted
1/4 cup lemon juice
2 cups salsa
1/4 teaspoon salt
1/4 teaspoon garlic powder

1.  Scoop out the meat of the avocado and mash the avocado in a medium sized bowl with the lemon juice.  Stir in the salsa, salt, and garlic powder.  Serve with tortilla chips.

Photobucket Friday February 24 is National Tortilla Chip Day.  In honor of this "holiday" I thought I would post a collection of nacho recipes.  Some of these recipes are also perfect for celebrating St. Patrick's Day. Some of these nachos include tortilla chips, while others are nacho like or are desserts.  I never knew that there were dessert nachos until I started looking for nacho recipes, these look so good.  These recipes are great for a party, to make for a snack or appetizer, or for dinner.

Chicken Bacon Ranch Nachos


The idea for these nachos came about sort of by accident or at least on a whim of my husband.  One day when we were  making Chicken Bacon Ranch Pizza, we had some leftover chicken and bacon.  My husband decided to put some cheese, chicken and bacon on top of tortilla chips and microwaved them and then put ranch dressing on top.  I told him that I did not think it was a good idea and did not think that they would be very good.  My husband proved me wrong, they tasted so good.

I changed his idea a little bit by making it in the oven, because I like that better.  This is a great appetizer and snack and is really easy to make.  These are perfect for any party or just because.  These are always ingredients that I have on hand and I can't wait to make them again.  Enjoy!



Chicken Bacon Ranch Nachos

Tortilla Chips
1 cup shredded cheddar cheese
3/4 cup precooked chicken strips, cubed
1/4 cup bacon bits
1/3 cup ranch dressing

1.  Preheat the oven to 350 degrees.

2.  Evenly spread a layer of tortilla chips on a cookie sheet.  Sprinkle the cheddar cheese evenly on top of the tortillas.  Then sprinkle the chicken and bacon on top of the cheese.

3.  Bake for 2-3 minutes or until the cheese is bubbly.  

4.  After taking the tortillas out of the oven, drizzle the ranch dressing on top of the nachos.

Bacon Cheeseburger Roll-Up


This is a great dinner idea for a weeknight because it is easy to make and does not take too long. It is also something that kids and adults will like because it combines pizza with a bacon cheeseburger.  This is really good, it reminds me of eating a bacon cheeseburger in a stromboli form. I used ground turkey (since I don't like beef), but ground beef can be substituted instead. This is a good comfort food. This is a meal that we have had many times and will continue to make.


Bacon Cheeseburger Roll-Up
(Recipe adapted from Kraft Food & Family Magazine, Spring 2007)

1 lb. ground turkey (can substitute ground beef)
1 teaspoon garlic powder
1/2 teaspoon Italian Seasoning
4 slices of bacon, chopped
1/2 lb (8 ounces) Velveeta, cut into 1/2 inch cubes
1 refrigerated pizza crust
Marinara Sauce (optional)

1.  Preheat the oven to 400 degrees.

2.  Cook the ground turkey and bacon in a large skillet on medium-high heat until the ground turkey is evenly browned, stirring occasionally. While the turkey and bacon are cooking add the garlic powder and the Italian Seasoning.  Drain and then return the meat to the skillet.  Add the Velveeta and then cook until completely melted, stirring frequently.  Remove from the heat and set aside.

3.  Unroll the pizza dough on a greased cookie sheet.  Press the pizza dough into a large rectangle.  Top evenly with the meat and cheese mixture.  Roll up the dough, starting at one of the long sides.  Put the roll, seam-side down on the cookie sheet.

4.  Bake for 20-25 minutes or until golden brown.  Cut to serve and serve with marinara sauce.
