It's time for the Crazy Cooking Challenge. This month's challenge was Cheesecake. I love cheesecake, but my husband doesn't, so I usually don't make it. I decided that I was going to make individual cheesecakes, and there were so many easy recipes out there. I decided to make Individual Oreo Turtle Cheesecakes from Lauren's Latest. I love Lauren's blog, she has so many fantastic recipes and desserts.
These cheesecakes are so delicious. I made them for my parents and siblings, who are big cheesecake fans, and they loved them!! One of the best part is the surprise crust on the bottom.
That's right, there is an Oreo cookie on the bottom of these individual cheesecakes. I don't think that these could get any better, except of course there are chocolate chips, pecans, and caramel sauce to top it all off!! I loved that these were easy to make, without all the work of making a big cheesecake. They were also extremely delicious. These are on my list of desserts to make again!

Individual Oreo Turtle Cheesecakes
(Recipe from Lauren's Latest)
Oreo Cookies
8 ounces cream cheese, softened
1/4 cup sugar
1 egg
1/2 teaspoon vanilla
1/4 cup chopped pecans
1/4 cup mini chocolate chips
Caramel ice cream topping (optional)
1. Preheat the oven to 325 degrees.
2. Line a muffin tin with liners and place an Oreo cookie at the bottom of each muffin tin.
3. In a large bowl, beat the cream cheese and sugar until smooth. Stir in the egg and vanilla until combined.
4. Evenly spoon the batter over the Oreo cookies. Top each cheesecake with the chocolate chips and pecans.
5. Bake the cheesecakes for 15 minutes or until they are set.
6. When done cool and refrigerate until ready to serve. Top with caramel ice cream topping.

I totally procrastinated and never got my cheesecake recipe made. Boo. But I was totally going to do a turtle or toffee cheesecake. Great minds. :) The Oreo turtle combo sounds awesome!
