Asparagus is one of our favorite vegetables to make. This is a great way to make asparagus and make them taste great. These remind me of fries, but made out of asparagus. They taste so good that you don't realize that you are eating vegetables. This is a great side dish that is both delicious and healthy.
Breaded Asparagus
(Recipe adapted from Weelicious)
1 cup panko or bread crumbs (can use Italian flavor to give it some more flavor)
1/2 teaspoon garlic powder
1/2 teaspoon salt
2 eggs
1/4 cup flour
1 bunch asparagus, stems removed
1. Preheat the oven to 450 degrees.
2. Mix the bread crumbs, garlic powder, and salt in a bowl. In a separate bowl, whisk the eggs. Place the flour in a third bowl.
3. Making an assembly line, dip the asparagus in the flour, then the eggs, and then into the bread crumb mixture. Coat evenly and repeat with each asparagus.
4. Place all of the asparagus on a greased cookie sheet. Bake for 30-35 minutes or until the bread crumbs are golden brown.

DeleteI used fresh asparagus. You could probably use the canned version, but I think the fresh tastes so much better. I hope that you like it!!
